Perk Up Your Holidays with Our Favorite Espresso Cookies

It’s the most wonderful time of the year! Whether you’ve just started your holiday shopping and decorating or your tree’s been up since the day after Halloween, it’s hard not to feel the holiday spirit in the air as December approaches. One of our favorite parts of the holiday season has got to be all the yummy sweets and treats - cookie decorating parties anyone? 

By now you probably know that at Callyssee, we’re just a little bit obsessed with coffee. It’s not only incredible to drink, but it has a ton of skincare benefits too. We’re always trying to find ways to incorporate coffee into our daily lives, whether it be in our skincare routine or in delicious food recipes.

In fact, one of our favorite holiday recipes is for these super delicious chocolate chip espresso cookies, which we’ve adapted from The Food Network. Keep reading for a recipe that’s sure to perk up your holiday season this year!

What You’ll Need:

  • 1/2 cup (1 stick) butter, softened
  • 1 cup light brown sugar
  • 3 tablespoons granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons instant espresso coffee powder
  • 1 1/2 cups semisweet chocolate chips

How to Make Callyssee’s Favorite Espresso Cookies:

Step 1: Preheat the oven to 300 degrees F.

Step 2: Cream the butter with the sugars using an electric mixer on medium speed until fluffy, approximately 30 seconds. 

Step 3: Beat in the egg and the vanilla extract for another 30 seconds.

Step 4: In a mixing bowl, sift together the dry ingredients and beat into the butter mixture at low speed for about 15 seconds. Stir in the espresso coffee powder and chocolate chips.

Step 5: Using a 1-ounce scoop or a 2-tablespoon measure, drop cookie dough onto a greased cookie sheet about 3 inches apart. Gently press down on the dough with the back of a spoon to spread out into a 2-inch circle.

Step 6: Bake for about 20 minutes or until nicely browned around the edges. Bake a little longer for a crispier cookie.

Step 7: Serve warm with a glass of milk and enjoy!
